When the restaurant opened its doors in 2003, it was one of most talked-about gastronomic arrivals in town. Celebrity chef Joël Robuchon organized his restaurant as a Parisian version of a modern tapas bar: 36 seats around an open kitchen serving small portions of creative dishes. Reservations are only taken for the first sittings of each meal: 11:30am, 2pm and 6:30 pm. After that, line up, like everybody else. - Le Coupe Gorge

Arguably one of the best fish and seafood restaurants in Paris, Le Dôme first became cool in the early 20th century, when, along with other Montparnasse establishments, this legendary restaurant served the "office" of several prominent writers. - Le Grand Véfour

Founded in 1784, this is one of the oldest and most famous restaurants in Paris. Although the cuisine is considered "traditional" French, the restaurant's menu draws inspiration from the regional cuisines of the southeast. Reserve well in advance. - Le Petit Pontoise

Chicago native Daniel Rose (who originally came to France intending to study philosophy) runs this restaurant as a one man show. There are only 16 plates and one sitting per night. Daniel does everything himself (including going to the market in the morning). Cuisine d'auteur at its best.
