In theory, the market cuisine means (for the chef) going to the market every morning to
purchase only the freshest produce and constructing the evening menu
based on the morning purchases. In reality, that's too risky, so there's
usually some sort of a menu, but one allowing a healthy dose of ingredient-based
improvisation and seasonal variations.
